Preparación

Pesa 16 gr de Liliana Camelo y calienta agua a 93ºC

Molienda

Muele a un tamaño medio-grueso. (11 en nuestro EK43)

Filtro

Moja el filtro con agua para arrastrar impurezas y saturarlo en agua. De esta manera el filtro no variará ni absorberá la esencia de tu café. Vacía tu jarra.

Añade Café

Añade el café al filtro y nivela la superficie.

Bloom

Enciente el cronómetro y vierte lentamente agua, empapando todo el café. Espera hasta el segundo 45.

Infusión

Añade lentamente 120 gr de agua, haciendo círculos con la jarra en sentido horario. Al acabar, mueve el filtro en círculos para que el café se redistribuya.

Acabando

Tras 20 segundos, añade 65 gr más de agua. Redistribuye nuevamente el café y espera hasta que todo el agua pase a través del café.

Of the bourbon variety and grown at 1600-1900 meters above sea level. A pass in both espresso and filter! Discover different ways to extract it. Growers who deliver their cherries to Mushonyi have endless wash options. Mushonyi have very high quality standards, but to be competitive, they must accept almost all the cherries delivered. If they don’t, the farmer will choose to go to a different season next time to sell more of his crop and avoid the Hassler of sorting. After purchasing cherry from growers, Mushonyi ships the cherry through a strict grading process. First, the wash station staff removes any lower quality cherries by flotation. Then a specially trained staff visually inspects the remaining cherry for any visual defects. After sorting, the cherries are dried in the sun on raised beds where they are rotated regularly to ensure even drying. Coffee in Rwanda is linked to the country’s tumultuous history. In particular, the last decade of the 20th century in Rwanda was marred by a terrible genocide that killed more than 800,000 people in less than 100 days between April and July 1994. This event nearly destroyed the country’s important coffee sector. The incredible resilience of the Rwandan people is evident in the way the economy has recovered since then. Due to strong government support, liberal trade rules, and international investment, today Rwanda is considered one of the most stable countries in the region. Coffee production has played a key role in this economic growth and stability.
